Monday: Beef and Potato Moons, fresh green beans
Tuesday: Taco chicken soup, corn muffins
Wednesday: Creamy chicken stew, herb and cheese biscuits
Thursday: Mixed vegetables and seasoned chicken drumsticks
Friday: Leftovers
Saturday: Cheese wrapped dogs and raisin-carrot salad
Breakfasts: Cream of wheat, fruit, smoothies, cereal,
Lunches: Leftovers, grilled cheese, fruit
Snacks: Muffins, fruit, carrot sticks
Cheese Wrapped Dogs
All-purpose flour 1 1/4 cups
Yellow cornmeal 1/4 cup
Baking powder 1 tbsp
Cold hard margarine, cut up 1/3 cup
Milk 1/2 cup
Hot dogs 6
Milk cheddar cheese 3/4 cup
Combine first three ingredients in medium bowl. Cut in margarine until mixture resembles coarse crumbs. Make a well in the center.
Add milk to well. Stir until just moistened. Turn out dough onto lightly floured surface and knead 5-6 times. Roll out or press onto 12 inch square. Cut in half. Cut each half into three equal portions, for a total of 6.
Place one hot dog lengthwise down the center of 1 dough portion. Sprinkle 2 tbsp of cheese evenly over top. Fold both long sides over hot dog. Pinch together to seal. Repeat til you have six rolls. Arrange rolls, seam side down, evenly spaced apart on greased baking sheet. Bake at 425 for 12-15 minutes until golden.
Taco Chicken Soup *makes 8 cups*
Bacon slices, diced 2
Sliced fresh white mushrooms 1 cup
Chopped onion 2/3 cup
Chopped red pepper 1/2 cup
Prepared chicken broth 4 cups
Chopped cooked chicken 2 cups
Can of kernal corn, drained
Jar of mild taco sauce 7.5 oz
Salt to taste
Grated cheddar cheese for garnish
Cook bacon in large saucepan til almost crisp. Do not drain.
Add next three ingredients. Cook for 5-10 minutes, stirring often, until onion is softened.
Add next five ingredients. Stir and bring to a boil. Reduce heat to medium-low. Cover and simmer for about 10 minutes, til chicken is heated through.
Garnish with cheese. Freezes well.
