This recipe is soo yum!!!
3 beaten eggs
1/2 cup veg oil
1/2 cup unsweetened applesauce
1.5 cups brown sugar (you can experiment with less!)
2 cups zucchini, shredded
2 tbsp vanilla
3 cups whole wheat flour
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder
3 tsp cinnamon
1 cup chopped nuts or flax seed, optional
Mix all wet ingredients in large bowl. Mix dry ingredients in second bowl. Mix together and fold in nuts. Bake at 350 for 1 hour 5 minutes. (Makes two large loaves)
