"Yes, we did produce a near-perfect republic. But will they keep it? Or will they, in the enjoyment of plenty, lose the memory of freedom? Material abundance without character is the path of destruction"-Thomas Jefferson

Day 12: Best Cookies EVER!!

We started the beginning of our massive Christmas baking today and I had to share this cookie recipe:

Double Chocolate Chip Cookies
1 cup margarine, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1/3 cup unsweetened cocoa powder
3 cups semi-sweet chocolate chips
Add-ins that we use: walnuts and unsweetened coconut

Preheat oven to 375. Grease cookie sheets.

In medium bowl, cream margarine, white and brown sugars until smooth. Beat in the eggs one at a time, then stir in the vanilla.

Sift the flour, baking soda, salt and cocoa powder and mix well into the sugar mixture. Stir in chocolate chips and add-ins if desired.

Roll tablespoonfuls of dough into balls and place one inch apart onto cookie sheets. Bake for 8-10 (I err on the shorter side) in preheated oven. Allow cookies to cool on baking sheet for 4 minutes before moving to platter or rack to cool completely.
